One of the most important things to be able to do when you are watching the pennies is make pastry. You don’t need to be fancy and make puff pastry, or filo pastry, just plain old shortcrust pastry. It’s quick, easy and at just 17p per 8″ tins worth of pastry it’s super cheap. Make it and freeze it in batches if you have to. Just take out early to defrost completely the day before and you’ll be good to go.
Yield enough for an 8in square tin
Basic Shortcrust Pastry
125g/4oz plain flour
1/2 tsp salt
55g/2oz butter, cubed
45ml/3 tbsp ice cold water
Add butter to flour and salt and rub into breadcrumbs.
Add water and mix until it forms a dough.
Wrap in cling film and pop into a fridge to chill for 20 minutes.
