If you love your pancakes, then these are going to be a total winner with you. Cheap to make, super tasty to eat. Ideal for Appetizers or indeed Sunday Breakfast. Here’s our Poached Egg with Rosemary Pancakes. Served with just one egg here, these worked out at around 24p per serving using value brands, so 48p in total to serve 2. But serve with 2 eggs for more sauce. Therefore, 2 eggs would bring the serving to just 32p per person. Utterly delicious.
Poached Egg with Rosemary Pancakes
Yield Serves 2
A delicious stack of Rosemary pancakes served with a soft poached egg.
120g plain flour
3 tsp dried rosemary
1/4 tsp salt
1/4 tsp black pepper
3 tsp sunflower oil (for cooking)
Sieve the flour. Into the flour add the egg, rosemary, milk, salt and pepper. Mix to form a smooth batter.
Heat frying pan, add tsp of sunflower oil and drop one tablespoon of the batter into the pan. Fry until golden. The more pancakes you need, you will need to use the rest of the oil. Make 10 pancakes, cover and leave to one side.
Towards the end of you making the pancakes, get a saucepan and add water. Bring to the boil. Oil your egg poachers, then add to the water. Add your eggs and cook until done.
Pile 5 pancakes up on plate, and top with egg.
